Healthy Peanut Butter Cookies
I can’t take credit for this recipe. I found it somewhere in my Facebook feed in the middle of the night when I couldn’t sleep and took a screenshot so I wouldn’t lose the recipe (it was just typed into a post). Unfortunately, I didn’t capture the author’s name so I apologize in advance for not giving credit. I can safely say that my brain does not fully function in the middle of the night! This recipe looked too good not to share!
Healthy Peanut Butter Cookies
Yield: 12
Ingredients
- 1 cup natural peanut butter (room temperature)
- 3/4 cup oat flour
- 1/4 cup maple syrup
Instructions
- Preheat over to 350F (180C) and line a baking sheet with parchment paper.
- Add peanut butter and maple syrup to a mixing bowl. Combine until a creamy paste forms.
- Fold in flour and stir until incorporated. You should be able to roll the dough into balls. Add more flour until the right consistency.
- Divide dough into 12 balls and place on baking sheet. Flatten each ball with a fork, forming a cross shape on the top of each cookie.
- Bake for 12-15 minutes or until browned.
- Remove from oven and allow to cool on a baking rack for 10 minutes or longer.
