Renay's Granola

Ingredients

  • 2 ½ cups regular rolled oats
  • ½ cup amaranth flour
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 2 tbls ground flax
  • 2 tsp cinnamon
  • ½ cup maple syrup
  • ½ cup coconut oil

Instructions

  1. Preheat oven to 350°
  2. Mix dry ingredients in a large bowl
  3. Add wet ingredients and stir well until the entire mixture is moist
  4. Spread evenly over a large baking sheet
  5. Bake for 25-30 mins or until golden brown. Stir or flip with a spatula after 15 mins of baking
  6. Allow to cool before storing in an airtight container. Granola will become crunchy while cooling
